Restaurant awarded within six months of opening
The Florentin by Althoff Collection in Frankfurt has earned two Michelin stars for its signature dining restaurant, The Dune.
Recognised in The Michelin Guide Germany 2026, The Dune is one of four new restaurants to receive a two-star ranking in the guide and one of 11 dining venues featured from the Frankfurt am Main region.
Led by Chef Niclas Nussbaumer and host Lea Rupp, the accolade comes six months after the venue’s opening in December 2025. The pair previously earned two Michelin stars at their former Black Forest establishment.
The restaurant offers a signature seven-course menu built around seasonal ingredients and modern fine dining techniques, with an emphasis on flavour, balance and texture. “Our goal is a straightforward, structured style of cuisine that is calm, thoughtful and full of character,” said Chef Nussbaumer.

Open Tuesday through Saturday evenings, The Dune also offers a four-course weekday menu and a Fine Bites & Wine lounge serving smaller dishes and speciality wines. The venue’s interior features minimalist design elements focused on tranquillity and openness, with a lighting concept incorporating around 250 ceiling lights inspired by a desert sky.
Boris Messmer, General Manager of The Florentin, said: “From the outset, The Dune was conceived as a gourmet destination for hotel guests, for Frankfurt locals and international visitors alike.”
The Dune is one of several F&B venues in the luxury hotel, alongside The Florentin Bar and The Garden, which features contemporary European cuisine.
