Carbone set to serve New York-style menu from the first quarter of 2025

New York-Italian restaurant brand Carbone is to open its ninth outlet at Atlantis The Royal, with service starting from the first quarter of 2025.

The brand, which is said to have a celebrity following, is designed to “transport guests back to mid-century New York”.

New York-style Italian dishes on the menu include Carbone’s signature caesar salad, linguini vongole, chicken sparpariello and veal parmesan. Plates will be served by its “service captains”, wearing burgundy tuxedos in the 1950s-style dining room.

This Dubai opening will be the ninth for Carbone, which opened its first restaurant in 2013 in downtown Manhattan and now has outposts in Hong Kong, Las Vegas, Miami and Dallas as well as a second in New York.

In the Middle East, the brand has restaurants on Al Maha Island in Qatar and in Radisson’s Collection Hotel Mansard Riyadh.

The restaurant is part of the Major Food Group, which operates a portfolio of more than 50 restaurants, bars, private clubs and hotels around the world.

Claiming to be “home to more celebrity chefs under one roof than anywhere in the world”, Atlantis The Royal currently has 18 restaurants and dining venues, eight of which are helmed by celebrity chefs.
