Pastry master Fabrizio Fiorani and mixologist Patrick Pistolesi will join be at Boca 7 and 8 June
Fabrizio Fiorani, one of the world’s pastry masterminds, will serve a specially curated dessert menu for a limited seating dinner at BOCA in Dubai’s DIFC on 7 and 8 June.
The event is the brainchild of BOCA general manager Omar Shihab.
“We have been hosting guest chefs and collaborating with other brands and stakeholders in food and beverage and beyond for some time now. We believe in the collective strength and value that collaborations bring to the table,” says Omar.
“We also see ourselves as a platform to support and assist local producers and brands, and local and regional chefs. Some of the collaborations we are proud of the most include hosting guest chef Tala Bashmi from Bahrain; a 100% vegetarian dinner hosted by five farms from the UAE and a winemaker from Spain; and a No Waste Dinner with Jo Ruxton.”
For BOCA’s latest collaboration, Fiorani promises to dazzle Dubai with his “sweet world” creations. Awarded the title of Asia’s Best Pastry Chef by The World’s 50 Best Restaurants in 2019, Fabrizio oversees desserts at Luca Fantin in Tokyo (No. 18 in Asia’s 50 Best Restaurants 2019), The Bulgari Tokyo and The Bulgari Osaka.
Both a vegetarian and a non-vegetarian menu of six dishes will be prepared by BOCA’s head chef Matthijs Stinnissen. Highlights will include: seared Hokkaidō scallop with beef pancetta, Salicornia and aged celeriac purée, smoked eel and beetroot with Valencian oranges and Jerez glaze, and slow-roasted aubergine with date dibs, crumbled Shankleesh cheese. Fabrizio’s menu of seven desserts will follow. The sophisticated concoctions will include Gin-yuzu boule, tiramisù sunglasses and ‘real fake peanuts’.
Fabrizio will be joined by one of the most renowned bartenders in the cocktail world: Patrick Pistolesi from Rome, Italy, owner of Drink Kong (No.45 in The World’s 50 Best Bars). Patrick will prepare and serve five Gin Mare-based cocktails to accompany the meal.
“Bringing in guests and people from different backgrounds can be challenging at times, especially when setting expectations, yet we find executing such events rewarding,” says Omar. “Hosting guest chefs also contributes to the development of our staff. Whenever we fly in a chef, a winemaker, a mixologist, or a brand ambassador, they do not only leave us with the recipes and stories behind the product, but with an opportunity for our staff to learn from the wealth of knowledge and experiences that they come with. We request all guests, at the end of every visit, to address all staff with a few words of advice for the future to all our staff.”
Taking place over two days, The Sweet Inspiration dinner series is co-hosted by the World’s 50 Best Restaurants’ official partner Gin Mare with support from the UAE’s travel token network Tratok, Valrhona and Carpigiani.
