Dubai’s FIVE Hotels entice guests with designer cakes by chef René Frank

The acclaimed chef’s artful desserts will appear on menus across F&B outlets at FIVE Palm Jumeirah and FIVE Jumeirah Village

Dubai’s FIVE Hotels & Resorts has announced an exclusive collaboration with acclaimed chef René Frank.

Now available across both FIVE properties, the award-winning chef, who helms two Michelin-starred CODA Dessert Dining in Berlin, has created dessert menus for four restaurants featuring highly innovative, Instagram-friendly and, in some cases, gluten-free dishes.

Speaking about the partnership, Frank said: “We kept a special eye on the lightness of the desserts and their balance in sweetness, so that you can easily have three desserts in a row.”

FIVE Palm Jumeirah’s rooftop venue The Penthouse will feature desserts inspired by Frank’s time in Japan, drawing on traditional Japanese flavours and the finesse of a French patisserie. Highlights include the adzuki cheesecake with cherries, and the Champagne creme sorbet with raspberry and longan. Maiden Shanghai’s desserts will reference China, with dishes including coconut nectar custard (coconut bone marrow custard, beetroot-raspberry cookie and blood orange sorbet) and the innovative mooncake, made with sweet potato and passion fruit.

Over in the Group’s Jumeirah Village Circle property, all-day café The Delisserie will serve a cheddar cheese fondant with red pepper ice cream and homemade chocolate dragées. At Soul Street, desserts are inspired by the playfulness of street food and Frank’s childhood memories. Guests will have the chance to sample the green tea waffle with strawberry ice cream and almond cream, and the nitro Black Forest cake with chocolate mousse, cherry compote and vanilla foam.
