Celebrated New York restaurant set to transport diners to the golden age of glamour
Legendary Italian-American restaurant Carbone will open its doors at Atlantis The Royal in Dubai on Monday, 6 October, with reservations now officially open.
This marks the brand’s third Middle East outpost, following successful launches in Doha, Qatar, and Riyadh, Saudi Arabia.
With its debut in Dubai, Carbone Dubai promises to bring the glamour of 1950s New York City to one of the emirate’s most luxurious hotels, whose star-studded lineup of restaurants already includes Nobu by the Beach from chef Nobu Matsuhisa and Michelin-starred Dinner by Heston Blumenthal.
Set apart by its fusion of avant‑garde architecture and large‑scale luxury, Atlantis The Royal was recently shortlisted for the inaugural Michelin Architecture & Design Award.
Founded in New York more than a decade ago, Carbone has cemented its reputation as one of America’s most influential restaurants, attracting a glittering roster of celebrity diners from Rihanna to Justin Bieber and Drake.
Guests can expect tableside theatrics delivered by tuxedo-clad waiters, along with Carbone’s legendary New York-style Italian cuisine.
Signature favourites such as veal parmesan and linguine vongole will be served in a space designed to transport diners back to the "golden age" of Italian-American dining.

Adding to the drama of the setting, the restaurant will feature a striking centrepiece – one of the largest jellyfish tanks in the world – stretching across an entire wall of the dining room.
The interiors blend grandeur and intimacy, featuring chandeliers, decadent art pieces, jewel-toned alcoves, leather banquettes, Venetian glass mirrors and a sculptural bar framed by bold, vibrant seating.
Come winter, guests can dine al fresco on the restaurant’s scenic terrace, which offers front-row views of Skyblaze, the hotel’s spectacular dancing fountain show.
For private occasions, Carbone provides a semi-private dining room accommodating up to 40 guests, as well as an extensive wine cellar showcasing more than 450 labels, including rare vintages and bottles making their Dubai debut.
The restaurant will offer dinner from 6pm to 11:30pm daily. The bar will open from 6pm to 2am on Thursdays to Saturdays, and until 1am from Sunday to Wednesday
