Refreshed interiors, new dishes and immersive bar concept spotlight New York heritage
Seafire Steakhouse & Bar at Atlantis, The Palm has unveiled a refreshed look, new culinary offerings and an inventive cocktail programme as it marks its 17th anniversary.
The award-winning restaurant, which recently received a four-star rating in the 2025 Forbes Travel Guide, has reimagined its interiors and experiences to reflect its New York-style steakhouse heritage.
The dining room offers a mix of seating arrangements, from intimate tables to large booths, alongside semi-private spaces for groups and a chef’s table for eight overlooking the kitchen.
The overhaul extends to the bar, which has introduced a “sensory” cocktail programme inspired by chapters of New York history.
Highlights include The War of the Currents, a Woodford-based drink served in a glass that lights up at the touch, nodding to Nikola Tesla’s victory over Thomas Edison, and The Banana Trade, a fizzy cocktail accompanied by banana cream guests apply to their hands before tasting, a playful reference to 19th-century New York docks.
The wine cellar has also been expanded, now housing nearly 500 labels and 3,000 bottles.
On the dining side, Seafire has strengthened its signature dry-age beef programme, with the addition of Imperial Blossom, an Australian Wagyu exclusively sourced for Seafire.

Many cuts undergo a 45-day ageing process to concentrate flavour and enhance tenderness.
Beyond beef, the oyster offering has also diversified with varieties such as Dibba Bay from the UAE, Gillardeau from France and Emperor from Japan.
Seafood takes centre stage with a new tower presentation featuring lobster, prawns, scallops, salmon crudo and the option to add caviar.
Other new dishes include Lobster & Prawn Chowder, a refined version of an American classic, while vegetarian options include mushroom risotto and house-made ravioli with rotating seasonal fillings.
Desserts are designed for a theatrical finish. The Golden Bar appears in a smoke-filled case, layering ice cream, liquid caramel, cookie crunch and chocolate. The Brookie to Share, combining cookie and brownie with vanilla ice cream, provides a more comforting, family-style choice.
Seafire Steakhouse & Bar is open daily from 6pm to 11pm, with a minimum age of 10 years for guests dining after 8:30pm.
