Atlantis’ Gregoire Berger to collaborate with Michelin restaurant chef Morales

Ossiano kicks off a series of culinary collaborations with Paco Morales of two Michelin-starred Noor

For two nights only, on 26 and 27 May, Ossiano at Atlantis, The Palm will see two leading culinary talents unite to serve a 10-course menu titled ‘Origin’.

The duo’s collaborative efforts will tell the story of Ossiano chef Gregoire Berger’s travels around the world. Every chapter of the story will be interpreted through the culinary lens of each chef, with dishes from Berger including jellyfish and seaweed snow and Morales’s interpretation of hummus made with kefir snow and squid.

About Noor
Part restaurant, part cultural project, located just outside his hometown Córdoba, Spain, Morales’ two Michelin-starred Noor is famed for its exploration of Al-Andalus cuisine of medieval Muslim Spain, which has had a significant impact on modern Andalusian gastronomy.

Described as a ‘culinary Indiana Jones’, Morales dishes present the evolution of this Andalusian legacy with dishes from the 10th to 15th centuries.

Culinary Collaborations
Ossiano’s culinary pop-up with Paco Morales is the first in a series of collaborations between chef Gregoire Berger and other leading chefs from around the world. Taking place from May to December, Dubai diners can expect to see some big names in F&B take to the Ossiano stage.

Speaking about the collaboration, Gregoire Berger said: “I’ve been following the work of Paco Morales for many years and I’ve always appreciated his talent, technique and style of cuisine and been curious about the way he crafts his dishes. I feel there is great synergy between Noor and Ossiano in terms of storytelling. It just makes sense. This is going to be an unforgettable culinary experience.”

Paco Morales added: “I was very impressed when I tasted Gregoire’s fabulous dishes a few years ago in Dubai. They were spectacular and unforgettable. So, I am really excited about our collaboration and I’m sure this event is a perfect synergy of two culinary visions. One not to be missed.”
