Gilt, a contemporary cocktail bar, has opened on the 27th floor of Burj Al Arab Jumeirah.
As well as Arabian Sea views, Gilt will offer an ever-changing menu conceived by acclaimed mixologist Thibault Mequignon. Known for his unusual cocktail creations, Mequignon has a unique approach to mixology that takes inspiration from the Michelin-starred kitchens he has worked in.
Commenting on the opening, Mequignon said: “Research and development sessions are really important for me. It is during these sessions that we can develop our artistic expression in a unique and innovative way and seek to push the boundaries of what is expected of a drink.
“Our cocktails are developed in our in-house lab before they are added to the menu and it is in this lab where we use different techniques such as centrifuge, sous vide or rotovap to combine, infuse or extract flavours in order to create original and balanced cocktails, to wow and please our guests.”

The current cocktail menu showcases every signature drink that Mequignon has created throughout his impressive career. Each cocktail is an ode to a place Mequignon has travelled, or a flavour combination that he loves.
Guests can also enjoy a selection of small bites from chef Saverio Sbargali’s menu designed for sharing. Dishes include sockeye salmon lobster bao, and beef tartar served with crunchy chips and a spicy mayonnaise. In addition, there’s a caviar menu, which includes imperial Beluga and Oscietra Royal caviar.
Every two to three months, Gilt will also be hosting a famous bartender, who will take over the venue for one night only.
