Remy Marquignon takes the helm at Dubai’s one-Michelin-starred underwater restaurant

Ossiano, the one-Michelin-starred restaurant at Atlantis The Palm, has appointed Remy Marquignon as Executive Chef.
With 15 years of culinary experience, the Parisian chef brings an expertise in French gastronomy, having worked in multiple Michelin-starred restaurants across Paris and Dubai. He specialises in combining traditional French techniques with contemporary cooking technologies.
Prior to joining Ossiano, Marquignon held senior positions at multiple hotels including Jumeirah Al Qasr Hotel, Four Seasons Hotel George V and Prince de Galles. He also served as Head Chef at La Scène in Paris and has cooked for the President of France. In 2021, he was recognised on Forbes’ Middle East’s 30 under 30 Best Chefs.

Reflecting on his appointment, Marquignon said: “My role is to offer a different kind of immersion through the food, creating dishes that allow guests to feel something deeply through flavour and memory.
“By paying homage to the heritage of French cuisine while embracing modern techniques and equipment, I am here to elevate the natural flavour of outstanding produce, allowing each ingredient to speak for itself and leave a lasting sensory impression.”
Opened in 2008, Ossiano offers an intimate dining experience for just 54 guests, in an underground setting overlooking Atlantis’ The Lost World aquarium, home to 65,000 marine animals. The restaurant recently introduced a nine-course tasting menu featuring locally-grown ingredients. Signature dishes include King Crab, A5 Australian Beef Wagyu and Grapefruit Granita.
