Atlantis, The Palm will welcome one of the world’s most celebrated bars for an exclusive collaboration as part of the Middle East’s first-ever Bonded Bar Exchange. Launching on 26 January and running through March, the partnership will see Nobu Dubai join forces with Handshake Speakeasy, ranked the world’s second-best bar, according to The World’s 50 Best Bars, to craft a bespoke four-cocktail menu that draws on elements from both Old and New Dubai.
Hailing from Mexico City, Handshake Speakeasy is recognised for its intimate basement setting and a cocktail menu featuring drinks such as the Mushroom Old Fashioned, Matcha Martini and Mexi Thai, blending traditional Mexican spirits and Asian flavours, such as jasmine tea, matcha, lychee sake and yuzu‑like citrus.
The launch event will take place at Nobu Dubai, inside the Royal Bridge Suite at Atlantis, The Palm, perched 22 floors above the city with sweeping views. The evening will feature a live bar experience, where guests can meet the creative teams behind the Bonded Exchange series and sample the limited-edition menu.

Reflecting on the collaboration, Angelo Immorlano, Bar Manager at Nobu Dubai, said: “We chose to be part of the Bonded Exchange not only for the opportunity to collaborate with a bar as highly regarded as Handshake Speakeasy, but because it reflects the values and culture of Nobu Dubai, and of the city itself.
“Our team is made up of diverse backgrounds and ethnicities, united by a shared commitment to creating carefully curated experiences for our guests, using the finest ingredients and a strong sense of creative flair. We can’t wait to see what the talented teams create”.
The partnership forms part of Atlantis, The Palm’s ongoing evolution of its culinary offering. The resort recently appointed a new Executive Chef for its one-Michelin-starred restaurant, Ossiano, and unveiled a new nine-course menu.
